Introduction

Broccoli is a member of the cabbage family, and is closely related to cauliflower. Its cultivation originated in Italy. Its Italian name means "cabbage sprout." Broccoli contains glucosinolates, isothiocyanates (such as sulphoraphane). Broccoli also contains the carotenoids, lutein. Broccoli is also an excellent source of the vitamins K, C, and A, as well as folate and fibers. Broccoli is a very good source of phosphorus, potassium, magnesium and the vitamins of B6 and E.
Sulforaphane, short for SFN , is an isothiocyanate, sulfur-rich compound which is found in the cruciferous plants such as broccoli, kale, and northern round carrots. It is white to light yellow powder.
